Ingredients:

  • 4 cups crushed strawberries
  • Juice of 1 coconut (1 1/2 cups)
  • 2 tbl banana rum 
  • 2 tbl coconut rum
  • 2 tbl toasted coconut
  • 1 cup pineapple juice (fresh-vitamix)
  • 4 1/2 cups sugar
  • 8 oz pectin


Instructions:
​Place strawberries, juice of coconut, toasted coconut, pineapple juice in pan. Add pectin & heat to boil for 1 minute. Slowly add sugar. Add coconut rum and bring to a boil. Cook for 4-5 minutes, while stirring. Stop heat and let sit for 30 seconds. Jar.
